Passion, love, engagement.
The passion for nature, the love of the countryside and the engagement have been the driving impulse for the young Cesare Berasi to found the first sparkling wine production in the Giudicarie: the Maison LEVII
Cesare was born into a farming family. His maternal grandfather every morning supplied the inhabitants of Tione in Trento with fresh milk, while his paternal family dedicated themselves to animal breeding and fruit growing. The starting point was his father and uncles decision to revive some ground, which had already served as wine growing soils but which due to an outflow of refugees had laid unemployed. Thus began the cultivation of a modern and functional vineyard.
During his education at secondary school Cesare spent much of his free time in the vineyard; afterwards during his studies at universitiy his dream of his own winery grew continually. Over the years he understood that the sun-ripened grapes deriving from such a territory can be processed only into a product of the highest quality and that`s reflected in the excellence of the sparkling wine Metodo Classico LEVII.
In the year 2012 Cesare bought his family’s vineyards and began the sparkling wine production with the foundation of the Maison LEVII with the intention to present the outstanding quality of the LEVII sparkling wines to the world.

The passion for the vine. The winegrowing is an art and therefore it requires complete dedication, to convert a grape into an explosion of aromas.
The love for the country; a precious element in the production of high quality grapes, but also a social system, in which your own actions should have a positive bearing on the community.
Engagement is the word which characterizes all actions within the Maison Le Vii. It is not enough to own the best vineyards in a most favorable position, you have to dedicate yourselves completely, to gain the highest quality.
Time and quality belong together. The best sparkling wines have always been produced without haste, that’s the only way to bring the wines to their perfection.
In the mountains every activity gets more difficult and complicated, but the qualitative result is incomparable. At elevation every product will become better, more tasteful and healthier.
LEVII cultivates 20 hectare of vineyards, which are divided into four lands, “Le Vii”, “Prada”, “Dova” and “Dos da Doa”, all municipal areas of Stenico.
The vineyards lay on the hills of the Brenta Dolomites in the outer Giudicarie: La Comano Valle Salus. They lay on a height of 650 meters a.s.l with an ideal orientation towards the South. The vines are brought up according to the Guyot system and the distance between the vines is 70 cm, between the rows 2 meters and on one hectare over 7,000 vines are grown.

The main varieties in the production of sparkling wines according to the Traditional method are Chardonnay and Blauburgunder. These varieties achieve well here thanks to the special agricultural and climatic conditions of our countryside, resulting in a very high quality level, which enables our high-grade production.
The vineyard also cultivates small amounts of Müller Thurgau and Gewürztaminer grapes, which are not processed directly, but sold.
