The concept of the landscape includes the interplay between different, typical issues, which defines itself in the environment as well as in culture. These issues can also affect the wine growing in lending the wines unique characteristics. The landscape of the Bleggio and Stenico offers best conditions for the production of sparkling wines. <\/p>\n

The key issues, found in both landscape and culture, which are applied in the winery, characterize the produced sparkling wines: the vast aromatic bouquet, the tipicity, the uniqueness and the incomparableness.<\/p>\n

Giudicarie<\/h2>\n

The Giudicarie Esteriori extend over the Western part of the Trentino and lay between the Brenta Dolomites and the lake Garda. The hollow is divided into three different areas Banale, Bleggio and Lomaso and at the bottom of the valley lay the thermal springs of Comano, an important international name in the sector of thermal cures. <\/p>\n

In the whole valley you can find unspoiled nature, thanks to the absence of working sites, but also to the sustainable agriculture. The vineyards are planted only in the best positions. The soils are rare and precious, which guarantees the production of the best base wines. <\/p>\n

Due to different preconditions in the remaining areas apples, cherries, small fruits, potatoes, vegetables and herbs are grown, as well as food for breeding animals. Many of those products are processed directly from the growing farms. The area, which is influenced by the alpine climate and the lake Garda, offers ideal conditions to grow high quality products. <\/p>\n

The Brenta Dolomites is the mountain group, on whose slopes our vineyards lay. These build a marvelous alpine landscape and have been nominated as UNESCO world cultural heritage. The presence of these mountains is essential, as it guarantees the altitude, the solar irradiation and the variations in temperature which ensure the quality of the grapes <\/p>\n

The Ora del Garda is a warm afternoon breeze, which blows northbound from the lake Garda. The wind blows through the whole valley \u201cValle dei Laghi\u201d and the Limar\u00f2-canyon before it arrives at our vineyards.
This wind brings many advantages for our vineyards.<\/p>\n

It increases the daily variations of temperature, sees to it that the vineyards are constantly aerated and therefore guarded against illnesses, eases the icy winterly temperatures and guarantees a better chance of survival of the vines.<\/p>\n

The average altitude of the vineyards is 650 meters above sea level and guarantees the production of excellent sparkling wine grapes.<\/p>\n

The height brings fineness, freshness and persistence. L\u2019altitudine infine induce nei vini finezza, freschezza e longevit\u00e0.<\/p>\n

The vineyards of LEVII lay on steep slopes with an inclination of 15% to 45%. These plantations guarantee, although several technical and economical disadvantages and surely also some difficulties in handling are given, an appropriate exposition and an ideal solar irradiation. However the effort is much higher than in flat areas. <\/p>\n

The growing density of each vineyard lays over 7.000 plants per hectare and brings various positive aspects. Especially the vines competition lead to deeper roots and therefore the plants get more resistant against external influences. In addition the growth gets reduced, whereby the plants react less sensible to illnesses. In the end it leads to a lower yield <\/p>\n

The typical alpine climate, with its high variations in temperature, affect the quality of the wines. This climate guarantees especially the appropriate acidity until the grapes are fully matured. These variations in temperature stand for a broad aromatic spectrum. <\/p>\n

In the vineyards of LEVII the variations of temperature are caused by two essential issues: Ora del Garda (the wind on the lake Garda), warm and soft, and the fresh breeze, which comes from the Brenta Dolomites.<\/p>\n

The manual harvest allows a very gentle way to collect the grapes and protects consequently the whole vine. In this way the grapes are selected individually and afterwards they get laid in small boxes, whereat the damaged grapes can be removed. This prevents the squashing of the grapes and the eventual run out of the must and therefore the risk of oxidation disappears. The harvested grapes stay intact during the whole transport into the cellar. <\/p>\n

Each vineyard is characterized by an ideal solar irradiation, which can be traced back to the steep slopes of the vineyards and the correct exposition to the South <\/p>\n

Therefore the grapes are constantly under the effect of light from early morning until sunset. The solar irradiation and the exposition are very important issues, because they guarantee the ideal maturation of the grapes.<\/p>\n

The proportion between maturation and acidity is a very important aspect in the production of sparkling wines. The acidity is indeed a fundamental issue during the long lasting ageing of the sparkling wines in the cellar. That\u2019s why the cultivation itself is a very important factor, as it guarantees the ideal proportion between acidity and maturation and consequently an early harvest can be prevented. <\/p>\n

This gentle way of pressing is a special enological technique, which allows the yield of the most precious part of the must in a very gentle way. The Maison Le Vii uses exclusively this precious part of the must to produce their sparkling wines.<\/p>\n
